Falafel burger with avocado cream and Zeeland Salt Pure

Happy Hamburger Day! Now of course everyone knows the classic hamburger, but have you ever tried a falafel burger? We do, and it’s a delicious vegetarian alternative to the meat burger! We eat it with deliciously fresh avocado cream and enrich the flavors with Zeeland Salt Pure.

Preparation

Start making the falafel burgers. To do this, drain the chickpeas. Peel the shallot and garlic and grab the parsley and cilantro. Put the shallot, garlic and herbs (all coarsely chopped) in a pan with 1 tbsp olive oil until the shallot is glazed. Spoon this mixture with the drained chickpeas and allow to cool.

In the meantime, make the avocado cream. To do this, blend the pulp of the avocado, red pepper (without seeds), pickled ginger, coriander leaves, lime zest, 1 tbsp olive oil, Zeeland Salt Pure and Zeeland Salt Black Pepper.

Then in the food processor, blend together the ingredients for the falafel burger. This is the chickpea mixture that has just cooled, with flour, baking powder, Zeeland Salt Pure and Zeeland Salt Black Pepper.

Divide the falafel mixture into 4 equal portions and form into burgers. Sprinkle the burgers with panko. Then fry the burgers on both sides until golden brown and crispy. This will take about 3-4 minutes per side.

Slice the cucumber and pick the leaves off the head of lettuce. Cut the hamburger buns in half and spread the bottom half with the avocado cream. Top this with the burgers and top with slices of cucumber, lettuce and the top half of the bun.
