We combine 500 years of Zeeland craftsmanship with modern technical solutions to produce our salt. All these elements contribute to the artistry of our work: creating an extraordinarily authentic salt product that enriches our daily lives and offers a new flavor sensation each time.
Our story begins at the source: the water from the Eastern Scheldt. During high tide, the water is pumped from the waters near Bruinisse, where it has been naturally purified. We have permission from the municipality of Schouwen-Duiveland to extract this water. Subsequently, the water is further filtered in our saltworks. This process allows us to guarantee the highest quality. We do not discharge water back, and any remaining water is utilized by businesses in the region.
We pass the water through ultrafine filters before boiling to remove as many microplastics from the water as possible. Any possible impurities, like leftover seaweed, are also removed without affecting the natural mineral content of the sea salt. In our boiling kettle, we then heat the water. The seawater evaporates, becoming saltier over time. Once the correct salt concentration is achieved, the salt is ready for the next step!
The salt is transferred to smaller, open salt pans. Here, we use 100% Zeeland green (wind) energy to heat the saltwater until the salt crystals - in the form of pyramids - can form upside down on the water surface. When the crystals are large enough, they naturally sink to the bottom of the pans, signaling it's time for the next step in the process.
At this stage, the true craftsmanship of salt-making begins. With our knowledge and experience in hand-harvesting salt, we know precisely when our flakes have the right taste and texture. To make the salt extra smooth, we skim off the calcium in between. In the ideal situation, the salt crystals are carefully scooped from the pans and then slowly dried in our salt ovens. The final step is to package the sea salt or to add the finishing touch: smoking it or incorporating seaweed or herbs.
