Airy Meringue with Sea Salt Chili

Today is Egg Day, the day we reflect on how versatile eggs really are. Whether you use them for breakfast, lunch, dinner or in a delicious dessert, you can do anything with eggs. For this special day, we’ve come up with a fun recipe: meringue with Sea Salt Chili. This gives the classic sweet meringue a surprising twist with a little salt and a spicy kick. Preparation

Preheat the oven to 110°C and line a baking sheet with baking paper. Beat the egg whites in a fat-free bowl with an electric mixer on medium-high speed until frothy. Then gradually add the Sea Salt Chili while continuing to mix. Next, increase the mixer speed and add the sugar little by little, a tablespoon at a time, so that the sugar dissolves well and the meringue becomes glossy and firm. This process takes about 5-7 minutes, until the meringue forms stiff peaks. When the meringue is firm, you can add a pinch of smoked paprika for extra flavor and a red color. Gently fold this through the meringue with a spatula so that the lightness is maintained. Scoop or pipe the meringue in mounds onto the baking sheet, leaving plenty of space in between. Bake the meringues for 1.5 hours in the preheated oven. Then, turn off the oven and let the meringues cool in the oven with the door ajar so that they remain crispy. Once completely cooled, they are ready to be served. Enjoy the delicious contrast between sweet, salty and a touch of spice!
