Preparation

Preparing the pumpkin

Preheat the oven to 180°C. Cut the cap off the pumpkin and remove the seeds and threads from the inside. Carefully scrape away some extra flesh from the inside to make a cavity for the cheese fondue. Lightly rub the inside of the pumpkin with some olive oil and a pinch of salt. Place the pumpkin (with the cap off) in a baking dish and roast in the oven for about 20-25 minutes. The squash should be soft enough to support the cheese fondue, but not too soft. Remove from the oven and set aside.

Making the cheese fondue

Rub the inside of a saucepan with the sliced garlic. Add the white wine and lemon juice and heat over low heat until almost boiling. Gradually add the grated Gruyère and Emmentaler cheese, stirring continuously with a wooden spoon to avoid lumps. Mix the cornstarch with a little water to make a smooth paste and add it to the cheese fondue. This will make the cheese fondue slightly thicker and smoother. Keep stirring until the cheese is completely melted and has a smooth, creamy consistency. Season to taste with Zeeland Salt Smoked, black pepper and a pinch of nutmeg.

Add the cheese fondue to the squash

Pour the hot cheese fondue into the roasted pumpkin and place the cap next to it as decoration. Stir the cheese and scrape the inside of the pumpkin with it so that the pumpkin flavor is blended through the cheese. Garnish with parsley and a few pumpkin seeds, if desired. Serve the cheese fondue immediately, along with the bread cubes, raw vegetables and any pieces of apple to dip in the fondue.

Additional tips

If the cheese fondue becomes too thick, you can add a splash of extra white wine to make it creamy again. Enjoy this delicious and spooky Halloween cheese fondue! 🎃🧀
