Hummustoast with Sea Salt Black Garlic

Today is Hummus Day! So what could be more fun than preparing a tasty dish with hummus? We show you how we prepare hummus, inspired by Jigal Krant’s recipe, and what we add to make it a delicious lunch. Our secret is the addition of Zeeland Salt Black Garlic.

Preparation

Start making the hummus a day in advance. In fact, the dried chickpeas must first soak for 12 hours in plenty of water with a bag of baking powder. After these 12 hours, pour the chickpeas into a pan with fresh water and a new bag of baking powder. Put this pan on low heat with the lid on. This step is complete when the chickpeas begin to fall apart. This can take 45 minutes or longer.

Then drain the chickpeas. Save the cooking liquid though, we will need it again later. Let the chickpeas cool slightly before continuing with the next step.

While waiting for the chickpeas to cool, set the oven to 180 degrees Celsius and cut the vegetables. Place the vegetables on a baking sheet and drizzle with olive oil and Zeeland Salt Black Garlic. When the oven is hot place the baking sheet in it for 30 minutes.

Next, blend the chickpeas with the garlic, techina and lemon juice. Do this for at least 10 minutes, adding cooking liquid little by little until the hummus is just a little thicker than you want it to be. This leaves you room to perfect the flavor with a little extra Zeeuwsche Zoute Puur or extra lemon juice. Only at the last moment do you add the last bit of cooking liquid to create the perfect texture.

Then toast the sourdough bread slices until they are nice and crispy.

Now that all parts of the hummus sandwiches are ready, it’s time to build them up. Cover the bread slices with a generous layer of hummus. Then spread the grilled vegetables on top and finish with crumbled feta to taste. Add a little olive oil or Zeeland Salted Black Garlic if necessary.
