BBQ pulled chicken

Do you have a barbecue and a Dutch Oven or cast iron pan? Then this dish is a must! It is easy to make and ideal for a large party. In fact, the recipe is easy to double. No barbecue or don’t feel like lighting it? No worries! Fry the chicken thighs in a pan and cook them further in a cast iron pan, in the oven or on the stove. Thanks to the mildly smoked paprika, Zeeuwsche Zoute Smoked and Zeeuwsche Zoute Black Pepper, your barbecue sauce still gets that delicious smokey taste. That’s what we call: winner, winner, chicken dinner!

Preparation

Place your chicken thighs on the grill and cook them on both sides until golden brown. They don’t have to be cooked all the way through yet (better not even, you want to prevent them from getting too dry).

Next, heat a cast-iron pan or Dutch oven on the barbecue. Put the tomato paste in there and let it de-acidify for a few minutes. Then add apple vinegar, brown sugar, paprika, cumin seeds, smoked salt and a generous pinch of freshly ground black pepper.

Place your chicken thighs in this and cook for about 30 minutes. Stir occasionally so that the chicken thighs are always well coated with the sauce.

After 30 minutes, see if you can easily pull the chicken thighs apart with 2 forks, to a stringy texture. Can you do this easily? Then the chicken is ready.

Mix well with the barbecue sauce and serve on bao buns or hamburger buns, for example. Delicious with some pickled cucumber and red onion.
