Soba Noodles with Chicken and Chili Salt

Soba noodles with tender chicken and crisp vegetables come together to create a flavorful Asian dish. Soba noodles are Japanese buckwheat noodles with a firm texture, which allows them to perfectly absorb the flavors of the dressing. A pinch of Zeeuwsche Zoute Chili adds a subtle spicy twist to the dish and lets all the flavors shine.

Preparation

  1. Cook the soba noodles according to the instructions on the package. Drain them, rinse briefly under cold water, and let them drain thoroughly.
  2. Cut the chicken into thin strips. Cut the carrot and bell pepper into thin strips, and the scallion into thin rings.
  3. Meanwhile, make the sauce by mixing the Zeeuwsche Zoute Chili with the soy sauce, sesame oil, rice vinegar or lime juice, honey, garlic, ginger, and water. Stir everything well until the flavors are nicely combined.
  4. Heat the oil in a wok or large skillet and cook the chicken for about 5 to 6 minutes, until golden brown and cooked through. Add the carrot and bell pepper and stir-fry for another 2 to 3 minutes. The vegetables should remain nice and crisp.
  5. Add the soba noodles and the sauce to the pan and stir everything well so that the noodles absorb the flavors of the sauce. Heat the mixture for another 1 to 2 minutes over medium heat.
  6. Finally, stir the spring onion into the dish and taste to see if the flavors are balanced. If desired, add a small pinch of Zeeuwsche Zoute Chili for an extra spicy finishing touch.

 

Divide the soba noodles between two plates and garnish with white and black sesame seeds. Serve immediately.
