Some recipes end up in our inbox and are just too delicious not to share. This tarte tatin with apples from the garden of Moedertje Groen and a bit of Zeeland Salt Pure is one of those.
Behind Mother Green is Tessa Yanover, nature guide and author. She shares her love of all that grows and blooms and lives with the seasons as much as possible. In her vegetable garden in the Bulb Region, she finds peace and inspiration for her stories. Tessa sent us her version of this French dessert, made with apples from her own vegetable garden. The original recipe comes from Heel Holland Bakt, but she gave it her own twist. Normally you make tarte tatin with puff pastry, but she used shortcrust dough, the same dough you use for apple pie, for example. The salt provided that special, delicious crunch in the caramel.

Easy
45 minutes
Preheat the oven to 180 degrees. Grab a cast iron pan (or baking dish) about 24 cm in diameter.
Making caramel
Put the sugar in the pan and slowly melt over low heat until a golden brown caramel forms. Stir in the butter until nice and smooth. Toss in a pinch of Zeeland Salt Pure.
Add apples
Peel the apples, cut them into quarters and place them in the caramel. Let them cook in the caramel for a few minutes until they soften slightly.

Sand dough on top
Roll out the sand dough into a piece slightly larger than the pan and place it over the apples. Gently push the edges in so that everything fits snugly.
Baking
Put the pan in the oven and bake the cake for 25 to 30 minutes until golden brown.
Invert
Let the cake cool for a few minutes. Place a plate on the pan and invert the cake so that the apples are on top with their shiny caramel layer.
Enjoy your meal!
Tip: sprinkle with a little more powdered sugar or cinnamon sugar.
