Preheat the oven to 200°C.
Cut the squash into cubes (skin may remain) and place on a baking sheet lined with baking paper.
Mix the olive oil with the Sea Salt Black Garlic, paprika and some fresh thyme leaves. Stir in the pumpkin.
Roast the squash in the oven for 20 minutes.
After 20 minutes, add the mushrooms (you may also want to put them through some oil and black garlic salt) and roast for another 15 minutes.
Remove from oven, sprinkle with additional thyme and finish with Parmesan or walnuts.
Serving tip
This dish is also delicious as a side dish or as a light meal with a salad on the side. Want to eat something a little more powerful? Spoon the roasted vegetables over a creamy risotto.
