Cottage Cheese Bowl With Sweet Potato and Seasoned Minced Meat
A nutritious bowl that is quick to put on the table yet feels like comfort food: sweet potato, creamy cottage cheese and savory seasoned ground beef combine to create a delicious combination. Preparation
- Preheat the oven to 200°C. Peel the sweet potatoes and cut into about 2 cm cubes. Spread on a baking sheet lined with baking paper. Add 1 tbsp olive oil and the vadouvan seasoning and season with salt and pepper. Ladle to coat. Roast the sweet potato for 30 minutes in the center of the oven. Ladle halfway through.
- Meanwhile, chop the onion. Finely chop the garlic. Finely chop the cilantro and keep the stems and leaves aside.
- Heat 1 tbsp oil in a skillet over medium-high heat. Fry the onion and garlic for 3 minutes. Add the minced meat and coriander stems and fry for 10 minutes. Add 1 tbsp sambal and season with pepper and Zeeland Salt Chili.
- Meanwhile, dice the flesh of the avocado. Stir the rest of the sambal into the honey. Scrub the lemon clean, grate the yellow rind over the honey and squeeze out half of it.
- Divide the sweet potato, minced meat, avocado and cottage cheese among 4 plates. Drizzle with the honey, spring onion and Sea Salt Chili.
