Surf and turf combines the best of both worlds: sea and land. The best thing about this dish? You can vary endlessly. For this version, we use Zeeland Salt Black Garlic for a delicious umami flavor. We marinate the shrimp with olive oil and black garlic. We simply season the steak with salt and pepper. In this way, you put a barbecue dish on the table in no time that makes both meat and fish lovers happy.

1. Marinate shrimp
Thaw the black tiger shrimp and pat dry thoroughly.
Mix the olive oil with the Zeeuwsche Salt Black Garlic and lemon.
Put this together with the shrimp in a bowl and stir well.
Tip: For best results marinate for 4 hours, but at least 1 hour.
2. Barbecue Preparation
Fire up the barbecue to 150 degrees Celsius.
Slice off the top of the bulb of plain garlic so that all the cloves are exposed.
Pour a little olive oil over it and sprinkle lightly with salt.
Place the bulb of garlic on the barbecue, close the lid and let it roast for 30-40 minutes until soft.
3. Prepare steak
Remove steak from refrigerator and pat dry.
Sprinkle generously with Zeeuwsche Zoute Puur and Zeeuwsche Zoute Zwarte Peper and set aside.
4. Grilling steak on the barbecue
Place the steak directly on the barbecue grid and grill 2-3 minutes per side, depending on thickness.
Remove the steak from the barbecue and wrap in aluminum foil with a sprig of thyme. Let rest for 5 minutes.
5. Making Black Garlic Gravy
Squeeze the puffed bulb of garlic over a small pan on the barbecue or in a saucepan on the stove.
Stir well to give the gravy that delicious garlic flavor.
Add a bit of Zeeland Salt Black Garlic, if desired, for an extra flavor boost.
Remove the pan from the heat.
6. Grilling shrimp
Place the marinated shrimp directly on the barbecue grill and grill for a few minutes per side until white and no longer glazed.
Then it’s time to enjoy: place the steak on a plate, divide the shrimp on top and spoon quite a bit of black garlic gravy over it. Sprinkle with some fresh parsley and serve immediately. Enjoy your meal
